Watercress salad and Umeboshi Dressing

img_2490What the heck is Umeboshi paste????? That was my reaction. I have been on a quest to try something new each week and explore eating as much raw foods as I can. This week it is umeboshi paste and believe it or not I don’t think I have had watercress before. You will find umeboshi paste in the asian section of the store. It is a paste made from the Japanese ume plum. It is natural fermented and has been touted for its many health benefits which include easing digestive distress, alkalinizing the body and supporting the liver.

The dressing makes one cup and goes well on greens and fish. It is delicious on broccoli.

Ingredients

Instructions
  1. For the dressing place the first four ingredients in a food processor and blend until smooth. Store in a class jar.
  2. For the salad, take a bunch of watercress, the grated carrot and radishes and top with the dressing.
  3. To serve with broccoli heat a large skillet and add about 1/4 cup of water and let it steam for 2 -3 minutes until it turns bright green. Drain the water, add some red pepper flakes and top with the umeboshi dressing.

Copic Color Blending and Masking Practice

I worked on some color blending with my copic markers today. I also wanted to practice masking a stamping scene. I made a short video describing what I did. Here is a picture of my work. I attached the panel to some grey yardstick and made it into a thank you card.

Protein Gluten Free waffles

imageThese waffles deliver a punch of protein and are gluten free.  They freeze well and can easily be reheated in the toaster.  When you compine with a cup of greek yogurt you will get close to 40 grams of protein.
