Meal Plannng Week of June 27th

I did some extra food preping this week as next week is fourth of July weekend and we have a busy weekend planned.  So the food you see below will provide some options for next week as well. I have linked the recipes below.

Here is what’s on the menu:

Breakfast: Chicken Meatballs with cooked peppers and bok choy , Protein smoothie with arugula, pineapple and banana and coconut mana

Lunch: M/W Farro Salad – cook 1/2 cup farro, when cooked add to 1 large handful arugula, 1 cup chopped basil, onion and tomatoes. When you serve add Apple Cider Vinegar and pistachios to taste.

Lunch: F/SU Micro green salads with chicken, or ground beef meatballs

This is such an easy recipe and it keeps well in the fridge as a make ahead meal.

  1. Bake the spaghetti squash in the oven at 425 degrees for about 30 minutes.
  2. Brown the ground beef and season. I use salt, pepper, onion powder, garlic and paprika.
  3. Add the sauce and warm.
  4. When the squash is cooked cut it in half, remove the seeds and shreds with a fork.
  5. To serve add a cup or two of squash, and a cup of meat sauce. Top with fresh basil and parmesan cheese.

Salmon & Black Bean Burgers

This recipe can be tweaked so many ways with the types of spices you use.  When I ran this thru MyMacros I get the following for one burger:  Calories 106, Protein 18, Carbs 7, Fat 12

  1. Mix everything together and form into balls. Cook about 5 minutes per side. Serve with avocado.
