VIDEO: You are Sweet

Today I am making a pretty simple card. It is day 25 of the 30 day color challenge so I did a little copic coloring on the easter basket.

Protein Nutball Treats

When I started eating low carb I found myself missing having a treat once in a while.  This recipe is meant to be a treat. So only have one or two!image

Variations on this recipe are limited only by your imagination. The basic recipe includes nut butter and protein powder. Whatever else you add just adjust the above until the dough is the consistency that you can roll into balls. This recipe requires no cooking.

  1. Place all the ingredients in a food processor and mix until it starts to form a ball. The wetness of the batter will vary on the type of nut butter you are using as some are oilier than others just adjust by adding more peanut butter to get it to stick or more protein powder if two wet. Roll into small balls so that you get 24 of them from the mix. Place in the freezer to flash freeze for about 1 hour and then store in freezer safe bag. Keep them in the freezer for storing and just let them sit at room temp. before eating 1 or 2! (They are addicting!) I made these recently omitting the cocoa powder and used Vega Chai Protein powder and these were to die for!
  2. You can add flax seed, chia seed, crushed nuts, coconut whatever you desire and make thousands of variations of this nice little low carb treat!

VIDEO: Ocean Inspiration and a Card Challenge

I’m entering another card in the SweetPea Design Challenge (SPDSS40). I’m using a stamp set called Sail Away. I got the stamp in one of the summer card kits from Simon Says Stamps. I haven’t used it much as I just could not come up with any inspiration.

When I saw this weeks SugarPea design it all came together for me and I am really happy with the way the card turned out.

I don’t usually do any planning when I make cards but since I was working on this for just a few minutes each evening over the work week. I decided to plan it out. I wanted to be able to keep track of the supplies. I used a lot of topics for the coloring and I wouldn’t be able to edit the video until the weekend and I wanted to remember what I had completed and used in preparing the card. I may coninue this practice of creating a planning board. Do you use a planning tool when you create cards? Want to share what you do? Leave a comment and let me know how you do it.

This is a medley of squash, sweet potato and onions. I grill up a lot on Sunday and reheat throughout the week. I finish with a teaspoon or so of ghee, butternut oil or pumpkin oil and whatever seasoning I feel like. I use seasonings like garlic and herb, spicy pepper, lemon pepper and change it up over the week to accompany whatever else I am having it with. Adding steamed green beans and/or brocolli is a nice variation.

Instructions
  1. Decide what veggies you are going to use. Cut them into even chunks and rub with some type of oil (olive oil, coconut oil, butternut or pumpkin are a few of my favorites). Roast in a 400 degree oven for about 30 minutes and let cool. Place in a refrigerator container. I cook the onions low and slow on the stovetop until carmelized. During the week reheat on the stove and add whatever veggies, spice and another little splash of some kind of healthy oil to accompany your protein dish. I eat this for breakfast sometimes too!
